TRADITIONAL METHOD
Quality Sparkling Wine
Varieties: Chardonnay 70%, Pinot Nero 30%.
Vinification: fermented at a controlled temperature; secondary fermentation the following spring. Aged in the bottle on the lees for at least 60 months.
Characteristics: bright straw yellow in colour; very fine and persistent bubbles. Aromas of lime flowers, toast and a slight hint of smokiness meet the nose. In the mouth, it presents great energy and decision, with a sapid, persistent flavour.
Food Pairings: can accompany the whole meal; especially good with flavourful appetizers, fish dishes or spicy sausage.
Serving Temperature: 6-8°C.
