TRADITIONAL METHOD
Quality Sparkling Wine
Varieties: Chardonnay 70%, Pinot Nero 30%.
Vinification: fermented at a controlled temperature; secondary fermentation the following spring. Aged in the bottle on the lees for at least 36 months.
Characteristics: traw yellow in colour; fine, persistent bubbles. The bouquet is a mixture of flowers and citrus fruits, with slight notes of bread crust. In the mouth, it displays great energy and decision, which, together with its strong sapidity, leaves the palate clean and fresh.
Food Pairings: an accompany the whole meal; particularly good with fish dishes.
Serving Temperature: 6-8°C.
