Varieties: Pinot Nero 80%, Chardonnay 20%.
Vinification: fermented at a controlled temperature; secondary fermentation the following spring. Aged in the bottle on the lees for 24- 36 months.
Characteristics: light pink in colour; fine, intense bubbles. Aromas of pink grapefruit, red berries and some notes of croissant. Harmonious and balanced in the mouth giving total pleasure, with an added strong kick from the Pinot Nero.
Food Pairings: can accompany the whole meal; perfect with raw fish dishes like sushi and sashimi.
Serving Temperature: 6-8°C.
