TRADITIONAL METHOD
Quality Sparkling Wine
Varieties: Chardonnay 70%, Pinot Nero 30%.
Vinification: fermented at a controlled temperature; secondary fermentation the following spring. Aged in the bottle on the lees for at least 36 months.
Characteristics: bright straw yellow in colour; fine, persistent bubbles. The nose is met with delicate bread crust and balsamic notes with floral and white-fleshed fruit variations. In the mouth, a wine of character with an excellent sweet/acid balance.
Food Pairings: excellent as a pre-dinner drink or to accompany any part of a meal. Really good with fish dishes.
Serving Temperature: 6-8°C.
